Carmen Cimini - Executive Chef and Operations Director
Carmen Cimini opened the first Carm's Coneys in Newport Beach, CA. in 1985. Mr. Cimini, who was born in Brooklyn, later moved to Syracuse in upstate New York where he soon discovered the best hot dogs and sausages he had ever tasted. The maker of these extraordinary hot dog and sausage products had been known locally for using the finest ingredients, and natural casings, along with secret recipes that have remained virtually unchanged since 1879. Carm's Coneys immediately secured an agreement to produce a series of specialty hot dogs for his restaurant along with the exclusive West Coast distribution of these fine products. Carm’s Coneys, in an effort to expand their offering of fine products, found other New York State exclusive throughout the state that have manufacturered unique hot dogs since 1880. In an effort to capture the final piece of the New York hot dog puzzle, Carm’s added the already infamous Sabrett’s hot dog. The New York City hot dog you buy from the push carts located at every corner of the streets in New York City. Adding a very unique and delicious bun was the finishing touch and a legend was born, Mr. Cimini brings his many years of creative kitchen skills and restaurant management to the new and still the best - Carm's Coneys.
